How to make nem rán (Authentic Vietnamese fried sping roll)?

+ Ingredients:

For the filling: ground pork, wood ear mushrooms, carrots, kohlrabi, shallot, salt,pepper, eggs

For the wrapper: Viet Haus Fried Rice Paper

For the dipping sauce: lime, fish sauce, sugar, chili

+ Instructions:

Prepare the filling:

  • Soak wood ear mushrooms in warm water until softened, then chop finely
  • Shred carrots and kohlrabi into thin strips
  • Mince shallot
  • Combine ground pork, mushrooms, carrots, kohlrabi, shallot, egg, salt, and pepper in a bowl. Mix well.

Prepare the rice paper:

  • Lay a damp rice paper on a clean surface
  • Moisten it until become pliable

Wrap the spring rolls:

  • Place a spoonful of filling in the center of the rice paper
  • Fold the bottom of the rice paper over the filling
  • Fold in the sides, then roll tightly to form a spring roll

Deep fry:

  • Heat oil in a deep fryer to 350°F (175°C)
  • Carefully lower the spring rolls into the hot oil and fry until golden brown and crispy
  • Drain on oil absorbent paper
  • Make the dipping sauce
  • Combine lime juice, fish sauce, sugar and chili in a small bowl
